I have Kate's birth certificate. They had recorded Pilote instead of Pilot
but it's her. I have seen a few discrepancies here and there when it comes
to someone's age or birth in various sources.

The 1901 Census shows the family living at Union Street, Llanllwchaiarn
(Enum. District of Newtown). Household details show:
Christopher Jones, Head, M, 32, Chimney Sweep, Born Llanidloes
Kate Jones, Wife, 33, Born Llanbrynmair [contradicts your information]
Harry Jones, Son, 6, Born Newtown
FreeBMD is coming along but far from complete for Wales. You should easily
be able to order birth certificates for Christopher and for Harry (assume
you already have Kate's?) directly from the Supt. Registrar, Newtown. When
you order Harry's, give them the information you have from the 1901 Census
and this should give them enough to go on to find Harry's birth.
As for Harry's eventual marriage and death, he could've ended up anywhere
and with such a common name it's unlikely you'll ever know anything more
unless you can work back from any known descendants of his - any children,
where were they born and when, etc.
Same for Christopher Jones -- his occupation as a "Chimney Sweep" also
could've taken him far and wide. The only thing I can think of is, if they
stayed in the Newtown/Llanllwchairn area, they may very well be buried in
the large municipal cemetery in Newtown which, as far as I know, hasn't been
transcribed (although someone may contradict me).
1901 is about as far as you can go unless you know something more about
these people.
As for your Eliza Beedle, divorce wasn't an easy thing to do (even in the
U.S.!) I would keep looking for her death. Did they have a child before
she 'disappeared'? Have you found the record of Evan's remarriage? It
would state whether he was a widower or not. I think there must be records
you haven't located in those communities --- church registers, in the
absence of civil b/m/d records.

freebmd.org and also had a friend of mine in
England order two certs for two Harry Jones that were shown as being born
around 1895 in Newtown. Both proved to be the wrong Harry Jones.
We assumed they were divorced because we never found a death record anywhere
for her, and she would have only been around 30 when the other wife
appeared. They moved from Hoosick Falls to North Adams, MA around 1888.
There is no records of Eliza in any cemetery here> I've been to all the ones
in the area that she could be. 4 in HF, no Eliza. 3 in North Adams, the
same. I did see on FreeBMD that there a re two death entries for Eliza
Beedles, 1 in Newtown. The age listed though is 30 years difference.
Eliza, according to the 1861 or 1871 census (can't remember which one I
have) indicates she was born around 1855.
