We have a neice named Anwen Ellis, born and lives in Wales. Maybe taht's the correct
spelling.

I can see Stella's birth:
Stella E Williams, birth registered 1911 Q3 at Ffestiniog, mother's maiden name
Williams.
But I can find no mention of the mother on the 1901 census.
I've never come across the name 'Onwyn' before and it just doesn't sound
'right'. Welsh names ending in '-wyn' tend to be male.
Could it be 'Olwen' (possibly with the spelling 'Olwyn')
Do you have the birth certificate?
