Here are a few thoughts from a friend who has used the Great Session papers extensively:

I haven't ever written any notes on using the great Sessions records, but there is a
good article in the Rowlands' Welsh Family History. The NLW has a guide which should
be on their site.
The Crime and Punishment database on the NLW site has indexed every case in the Gaol Files
series between 1733 and 1833, and it is fairly easy to use.
The system and what has survived varies from one county to another. With an unusual
surname (this is where I am lucky) one can trawl through the docket books of pleas and
fines and extract the name. Very tedious but does produce results. The Docket books list
all the civil cases, the Plea rolls themselves include only those which came to court, and
a far lower proportion of cases came to court in the more recent years. The rolls usually
include the parish, so are much better as identifiers. There are also Equity cases but not
that many. The Prothonotary records are useful too.
The definitive guide is a huge book by Glyn Parry. There is a copy at SoG but your
correspondent may not be in London.
There are vast numbers of names in the GS records but they are not all that easy to use.
