According to Ancestry's census there are two families with the Surname
Oscough in 1901 and one each in the census for 1891, 1881, and 1861 (none in
1871 or 1851). There is no obvious relationship between these families. I
have looked at some of the images and Oscough appears to be a good rendition
of what is written, rather than one of Ancestry's infamous errors.
There are no records of the name Oscough in Free BMD.
However if you compare one of the 1901 records:
George Oscough abt 1854 Bishop Thornton, Yorkshire, Head Milby Yorkshire.
Elizabeth Oscough abt 1857 Langthorpe, Yorkshire, Wife Milby Yorkshire.
Nathaniel Oscough abt 1892 Milby, Yorkshire, Son Milby Yorkshire.
With 1861, George of Bishop Thornton can be found thus in 1861:
James Ascough abt 1829 Aldborough Ripon, Yorkshire, Head Bishop Thornton
Yorkshire.
Jane Ascough abt 1825 Sawley, Yorkshire, Wife Bishop Thornton Yorkshire
Margaret Ascough abt 1852 Bishop Thornton, Yorkshire, Daughter Bishop
Thornton Yorkshire.
GEORGE ASCOUGH abt 1854 Bishop Thornton, Yorkshire, Son Bishop Thornton
Yorkshire.
Thomas William Ascough abt 1856 Bishop Thornton, Yorkshire, Son Bishop

Frederick Ascough abt 1859 Bishop Thornton, Yorkshire, Son Bishop Thornton

(Ancestry has mistranscribed Ascough as Ascongh in this particular record).
There are over 1,500 census returns and 2,000 BMD records with the surname
Ascough, mostly in Durham and Yorkshire.

A conundrum! I too tried to find Oscoughs on the Mormon IGI and found just
one reference in 1881 in York. What was the father's name given on the
marriage certificate?
What might the possibilities be? Not registered under Jones but Oscough?
Or some other surname? Not registered at all? Child of a first marriage?
Adopted from another family member? Someone who had him illegitimately?
There is something in his background which he felt - or someone had made him
feel - uncomfortable about??
I don't really know how to advise you to proceed unless you could let us
know some more about him and his adoptive (?) family.
There may be other clues eg in his will or tombstone.
