Dear Enid,
By the time of the 1851 census, Emma would have been about 20 years old,
and could have
been in service for at least 6 years. Odds on, she was married before
1861.
Have you searched *all* England & Wales in the '51 census?
Her most likely English abode is Lancashire and there's a problem - a lot
of the
Manchester '51 census was badly damaged. After a huge effort by Manchester
& Lancs. FHS
members, there's now a transcription of the 'lost' census returns, and
it's available on a
pay-to-view Website via (I think) the Society of Genealogists.
That's my best guess,
