I'd be inclined to think it is A.L. - Agricultural Labourer, although I must
admit it is not very clear on the page.
On the same page there are a number of Sarah's. The S of these entries
doesn't look like the letter that you think is an S.
On the other hand towards the bottom of the page there are a few A.L.s and
again your suspected S doesn't look too much like an A when compared to
these.
However, A.L. is the most likely in a rural area such as Whitford.

Subject: [CLWYD] 1841 - what is this trade
Hi, in the 1841 census for Whitford, Township of Tre Llan it says the
professions is "S.L."
What does this mean? It is written by only the head of the family in
two neighboring houses?
Also, my family in Whitford in 1851 had two 'Waiters' rather than
servants - is this significant (they have the same surname).
