Jeff,
My Anne Jones was aged 29 and living in Bangor Street when she married
William Williams on 03/02/1863 in Aberffraw. On the marriage certificate
her father William was a fisherman, and on the 1851 Census he was a sailor.
I'm sure it's my Anne because at the time she was ten years older than
William, just as she was in every census up until 1901. I think you've
mis-read William senior's occupation in 1871 - I'm sure it's Sailor, not
Tailor.
Unfortunately I don't believe we are related, so I still have no-one to help
with this side of my Anglesey family.

That is my William and Elizabeth on the 1871 census, a former
Tailor,according to his daughter's marriage cert. Ann Jones born 1833
married Robert Roberts in 1862 in Llangefni.
The John on the 1871 census as a son, is down on the 1861 census as a
nephew, William and Elizabeth would have been in there middle 50's when he
was born, so that sounds more plausible.
Sam have you found your Robert's parents yet?
The IGI have a William Jones marrying Elizabeth Thomas on the 29 Sep1829
in Aberffraw, I will have to have a look at the film for marriage in
Aberffraw. The 1841 census has an Elizabeth Jones 70, living with William
and Elizabeth, may be William's mother. What is a Parish Constable?
William go's from being a Tailor to a Parish Constable living in one of
the Poor Houses in Aberffraw.
