I don't know much about Mon chapels but certainly I would be wondering if, in 1788,
the family were non-Conformist? Apart from the "revival" of the early 19th
century, the 1780s seems to be "the decade" for capelau.
You might have better luck finding William Jones in Llanbedrgoch as there would be few, if
any, capelau in the 1750s/60s.
Be careful to make too much, though, of a William Jones who worked for the person you
mention - I think it is an interesting thought but does contain the possibility of there
being 2 William Joneses. Sadly, for all of us, this is the case for our researches. I
think it is still an avenue worth persuing because of the Llandegfan-Llanbedrgoch
connection (which adds a lot of weight to a connection) but with the above caveat! There
could feasibly have been 2 William Joneses with the Llandegfan-Llanbedrgoch connection!
Having said that, I often put these thoughts to one side and explore a "line"
but mindful of my earlier misgivings.
If the family were employed by an estate, perhaps there are many generations doing the
same? See my "short" in Gwreiddiau Gwynedd regarding an interesting letter in
the NLW which doesn't pertain to your family but which shows that working
relationships, like tenancies, may have had an "hereditary" component.

According to the census return for Llanbedrgoch in 1851 my ancestor
Grace Jones was born around 1788 in Llandegfan, and a poor law document
on the 9th July 1814 says that she is of Llandegfan, and the daughter of
William Jones, quarryman of Llandegfan, but through her father's legal
settlement she was claiming settlement in Llanbedrgoch.
I have recently had a chance to look at the Llandegfan parish registers,
and although there are several William Joneses having children
christened there, I have not located Grace's christening in 1788. I have
also checked Llandysilio and Llanfaes, without success.
There is a document in 1839 where William Jones, and his wife Catherine
are removed from Llandegfan to Llanbedrgoch. This William Jones, like
Grace Jones's father in 1814, had served Michael Hughes of Plas y Brain
for a year, so it is reasonable to think this is the same one, and that
Grace's mother would be called Catherine.
If anybody can check the registers for other nearby parishes (eg
Beaumaris, Llansadwrn, or even Llanbedrgoch itself) I would be very
grateful.
