Hi Lesley,
A fairly common practice in Wales, particularly if the surname is
"common" such as Jones or Williams was to add a middle name that was
significant. My grandfather was William Jones, but from adulthood
onwards he added his mother's maiden name as a middle name, becoming
William Kinsey Jones.

Adoption of a middle name can certainly take place later in life. A
relative of my wife was baptised Thomas Parry and appeared as such in
subsequent censuses. It was only when he rose in the world that he
adopted his mother's maiden name and became T Jones Parry (it
certainly made life difficult for me as he also moved to a different
district). He became a County Councillor and High Chief Ruler of the
Rechabite Order. I can only assume that the family disowned him as
there was no family talk of him; after all a number of members of the
family did keep pubs!
