There's a really simple javascript that you can use.
<script language=javascript>
<!--
// By Joseph McLean <flux(a)thecentre.com>
var linktext = "E-mail";
var email1 = "web";
var email2 = "madrigaldinner.org";
document.write("<a href=" + "mail" + "to:" + email1 +
"@" + email2 + ">" +
linktext + "</a>")
//-->
</script>
Where "E-mail" is how you want it to appear on the page
"web" is the portion of the address before the @
"madrigaldinner.org" is the portion of the address after the @
I have been using it for awhile and it is really great!

Subject: Re: [OHGW] Email addresses
Hi Fellow coordinators!
With all the email addresses on our pages, including the ones
that are imbedded, I feel that we are helping spammers to harvest
good addresses. Has anyone considered this? Have you found some
way to "confound" the harvesting?
I feel bad that we are unwittingly contributing to spam.
Sue
