NC Archives can find the NC Archives publication, "Guide to Research
Materials in the North Carolina State Archives: County Records"

This guide provides information - by county - about original
AND filmed
records held at NC Archives. Be aware, however, the Archives may have
added acquisitions (or filmed additional records) since publication of
this book, so you can always ck with NC Archives to see if there is an
update for your county since publication of this guidebook.
There's also an incomplete (but hey, it's a start) finding aid
to estate
records held at the Archives at the same URL.
