In those times there was not ways of cooling products but I do know that
they prepared sandwiches, fried chicken, hard boiled eggs, breads, biscuits,
jams, honey, and just about anything that wouldn't spoil quickly. Most of
the meats were salted to protect against spoilage. They pretty much ate what
we eat today and of course there was no mayo or ketchup. Honey and jams were
pretty much eaten with every meal if they had the means to produce it or
afford the item. I subject that you go to a library and look for more info.
