IMPOSSIBLE COCONUT PIE (using Bisquick)
4 eggs
2 c. milk
1 c. flaked coconut
1 stick butter
3/4 c. sugar
1/2 c. Bisquick
1 tsp. vanilla extract
Preheat oven to 350 degrees. Place all ingredients in a blender & blend
until thoroughly mixed. Pour into greased & floured 10 glass pie dish. Bake
40 minutes to 1 hour. Serves 8.
Note: for added flavor try sprinkling about 1/4 tsp. ground nutmeg on top of
the pie before baking.
While baking, the ingredients in Impossible Pies separate, making a
piecrust, filling, & topping. Easy & delicious!

IMPOSSIBLE COCONUT PIE (from scratch)
2 c. milk
1 c. flaked coconut
4 eggs
1 tsp. vanilla extract
1/4 tsp. ground nutmeg
1/2 c. all-purpose flour
6 T. butter
3/4 c. sugar
Place milk, coconut, eggs, vanilla, flour, butter, & sugar in blender. Mix
well. Pour into a greased & floured 10 pie plate. Sprinkle nutmeg on top.
Bake at 350 degrees for 45 minutes.

IMPOSSIBLE PUMPKIN PIE
1/2 c. Bisquick-type Baking Mix
3/4 c. sugar
2 eggs
2 T. butter
13-oz. can evaporated milk
16-oz. can pumpkin
2 tsp. vanilla extract
2 1/2 tsp. pumpkin pie spice
Beat together all ingredients until smooth. Pour into a greased 10 pie
plate. Bake 350º for 50-55 minutes. Pie is done when knife inserted into
center comes out clean.

IMPOSSIBLE LASAGNE PIE
1/2 c. creamed cottage cheese
6-oz. can tomato paste
1/4 c. Parmesan cheese
1 c. mozzarella, shredded
1 lb. ground chuck, browned & drained
1 c. milk
1 tsp. oregano leaves, crushed
2/3 c. Bisquick
1/2 tsp. basil leaves, crushed
2 eggs
1 tsp. salt
1/4 tsp. pepper
Preheat oven to 400 degrees, grease 10 pie plate. Layer cottage cheese &
Parmesan cheese into plate. Mix beef, herbs, past & 1/2 c. mozzarella, &
spoon onto the cheeses. Beat milk Bisquick, eggs, salt, & pepper for 15 min.
in blender on high. Pour mixture on top of meat mixture. Bake until knife
inserted comes out clean, about 30 to 35 minutes. When done sprinkle with
remaining mozzarella. Serves 6.
