Hello Dave Lee,
Not a fun job.... Here is how wikispace describes the job.
lime burner <

Running a lime kiln needs you to watch the heating of chalk until it
starts to produce very dangoures toxic carbon monoxide. This can easily
make you very drowsy or even paralyse before you die or suffocate. Don¹t
worry though you only have to sit at a kiln for about 48 hours at a time.
The hard cake of quicklime is taken from the kiln and taken to water
straight away. It immediately reacts producing a lot of heat and a shower
of specks of slaked lime. These crumbly grains are then crushed into lime
powder that will be added to sand to make mortar.
----
I remember hearing that cooking lime takes lots of wood. That in South
America the Maya produced huge amounts of slaked lime by burning limestone
for use as high quality mortar and stucco in their temples. This process
led to deforestation, already a problem because of the extensive use of
wood for commoner housing and as fuel. It is thought that this
deforestation caused their farm irrigation system to silt up and fail ---
leading to widespread malnutrition --- leading to the collapse in the
size of their empire.
Cheers,
Chris
