It is an old Austrian recipe called "Schinkelfleckerln" and is one
of the most common and best liked meals in my kitchen. To make it easy,
1 Package wide noodles (cook according to package direction al dente)
In skillet sautè:
1 medium onion diced in and browned in 1 Tablespoon oil or butter
add one 1 cup of cubed ham, brown cubes if you like, deglaze with a little
water to scrape residue from skillet bottom. Mix this with noodles and put
it in a well buttered pan.
I am using a glass high rim cake pan 13x9x2
In a measuring cup holding four cups:
Mix 3 eggs with enough milk to measure 3 1/2 cups (use whisk!)
add salt pepper to taste and pour over noodles
Bake 3/4 hour at 350F or until you can see that the bottom of the pan has a
nice brown crust. For the last 5 Minutes of baking sprinkle some Parmesan
cheese over it. Cut in squares and serve with a freshly tossed salad!
