Cream or Bread Soup
Rahm - oder Brotsuppe
The inevitable menu for any illness, this classic German soup nourished any diner
regardless of health. White or while wheat bread work fine, but for a true Old World
flavour use slices of rye.
3 teaspoons unsalted butter.
preferably brae heels, cubed.
4 slices, homemade bread.
3 cups whole milk or 2 cups cream and 1 cup water.
1 teaspoon salt.
Melt butter in a heavy medium sauce pan; add bread cubes and brown until golden, stirring
to prevent scorching. Add milk and salt; simmer until heated through, about 10 minutes.
