an earlier Thomas Clary from Ireland also without a date...he would be the father of 1630 Thomas Clary. They came over in 1653...I think

I did find Eliza Mayes (finally!).
The correct information is that which you found on the 1900 census.
My search initially started as an attempt to discover the fate of Grover Cleveland (Cleve) Clary's widow (Etta) and daughter (Lorena) after his death. Here's what I have so far ...
Lorena's maternal grandmother (Cleve's mother-in-law) was Eliza Mayes. Her obituary from 1929 is posted below. By that time Cleve's widow, Etta, had remarried a John Kent. The next year (1930), Lorena married Raymond Fuller. Both Raymond Fuller and John Kent were neighbors of the Clarys.
Interesting that Eliza was the daughter of Fullers, and that her daughter Lorena eventually married one of them. The vast majority of Fullers in that area were related, as they were some of the earliest settlers, and continued as community leaders well into the mid 20th century. This is a great glimpse into the culture of a village in N. Texas in the early 20th century (the village of Euless didn't have electricity until the 1930's and no paved roads until the 1950's!)
Here's the text from Eliza's obit:
Friday February 15, 1929 EULESS NEWS By Sally Ferris
The community suffered a great loss Friday evening when death came to Mrs. J. T. Mayes. She was born in 1871 and reared in this community. She was the daughter of Mr. and Mrs. Henry Fuller. She was married to Mr. J. T. Mayes while a young girl and continued to make her home here. She joined the Euless Methodist Church at about the age of fifteen and has been a great help to the church in many ways. Although she had been confined to her bed for eleven years, her death was quite a shock to this community. She took the flu and pneumonia and lived only a few days. Funeral service was conducted at the home last Saturday afternoon, by Rev. T. A. Plunkett, pastor of the Methodist Church. Those who survive her are her husband, J. T. Mayes, two daughters, Mrs. R. J. Craft of Ft. Worth and Mrs. Etta Kent; five grandchildren, R. J. Craft Jr., Misses Lucille and Lois Craft and little Doris Jean Craft, all of Ft. Worth, and Miss Lorena Clary, a brother, Mr. W. A. Fuller, and five sisters, Mrs. J. D. Dockery, Mrs. John Himes of Grand Prairie, Mrs. H. F. Ferris, Mrs. George Smith of Irving and Miss Beulah Koonce, and also a large number of other relatives and friends. This community joins in greatest of sympathy for the loved ones in their bereavement.
Russ - I also have since received correct information on Cleve's lineage - he was the last child of William Jackson Clary (6.11.1832-4.22.1889) and Elizabeth Jane Angley (b. 6.24.1841). Hope this can be of use to you in further research.

You asked if I had encountered these coincidences in my research - yes, especially in the Clary family.
OK. Grover's wife's name is Mary Etta Mayes, born circa 1895 in Texas (prob Tarrant Co.), father Thomas John Mayes, born 18 feb 1872 in Texas, died 22 Sep 1944 in Texas, married Mary Emma Hinton on 30 Nov 1899 in Texas. Mary Emma was born 19 Jul 1882 in Texas (where else?)
In the 1880s it's John Thomas Mize, father James Nelson Mize who married Martha Mallett 27 Jun 1861 in Texas.
1900 census Tarrant Co. find Jno T. Mayes, Eliza, Mattie and Etta.
In 1920 census Tarrant Co. find John Mayes, Lizie, Etta Clary, Cleave, and Lorena all in same household.
My records indicate that Grover C.'s father was John Jordan Clary, b 5 May 1841 in Illinois and mother was Tennessee Ellen Walker, b. 23 June 1854 in Texas. John Jordan's father was John Clary, b. 1821 in Illinois and his father was Elisha Clary, b. circa 1795 in Tennessee, died 1821 Bond Co. Illinois.
You probably have most of this but there is more if you need it. Take care, Russ
