Don't know if this shines any light on the Jerusha issue but it is what I have in various books concerning Stephen Chipman (b. 9 Jun 1708 Sandwich, Mass., d. bef. 7 Oct 1749 West Indies), son of John Chipman and Mary Skiffe.
Looking at the article "A Chipman Family History" by Handley Chipman (1717-1799) of Newport, R. I., and Cornwallis, Nova Scotia as contributed by Mrs. Arthur James Tretheway, Litt.D., of Boston, Mass. the following was recorded by Handley:
"Just about a year after my dear Mothers Death, my dear father married the Said widow Case at Newport on Said Rhode Island. She had had two husbands, one a Griffin, the other said Capt. Case. by said Griffin She had a daughter who lived to grow up and Married my Said dear fathers Son Stephen, who died in Said West Indies Leaving no Child. My Mother in Law's maiden name was Mary Hoockey, and after my dear father had Lived with her 19 years She died also with the Consumption Leaving no Child by my dear father."
Two things to note:
1. The father referenced above is John Chipman (b. 3 Mar 1669/70 Barnstable, Mass., d. bef. 4 Jan 1756 Newport, R.I.)
2. Per the article, '... no attempts have been made in this article to correct any erroneous statements of the author of the "History."'
Now, according to the book "John Howland of the Mayflower, Volume 3, The First Five Generations. Documented Descendants Through his third child Hope Howland, Wife of John Chipman" by Elizabeth Pearson White Stephen [EPW] married Mary Griffin, the daughter of Thomas Griffin.
With Stephen Chipman and Mary Griffin documented not having any children, those with Jerusha as their daughter are most likely incorrect or misinformed.
Several trees mention the possibility that Jerusha married James Chipman, son of above James Chipman (son of John Chipman and Mary Skiffe) and Mary Minor. However in EPW's book [p. 511] James is documented as having married Elizabeth Razor in Jun 1744. James, based on the date of probate of his will, died before 8 May 1757. This will was written on 17 Dec 1573. This indicates that he was alive at the time of the Jerusha Chipman marriage to Thomas Griffin in 1753. So I think that connection can be ruled out.
Does all this help answer who Jerusha was? Not really but I think it can rule out who she wasn't.

12. Jerusha Chipman. Seeking information concerning Jerusha (_________?) Chipman. She was born about 1730 (perhaps in Stonington, Connecticut) and died 2 March 1813 in Brookfield, Madison County, New York. Jerusha married Thomas Griffin 20 September 1753 in Stonington, New London County, Connecticut.
There in uncertainty concerning Jerusha's surname. In one version of the Stonington church records she is listed at the time of her marriage to Thomas Griffin as "Mrs. Jerusha Chipman", which indicates she was the window of ______________ Chipman at the time of her marriage to Thomas Griffin. On the other hand, many family researchers list Jerusha as the daughter of Stephen Chipman of Sandwich, Barnstable, Mass (b. 9 June 1708, d. Nevis, West Indies 27 April 1735), but without any credible source or proof cited.
Jerusha and Thomas Griffin had the following children:
(a) Anne Griffin b. 22 Oct. 1755
(b) Mary Griffin b. 18 May 1758, d. 8 Aug. 1848
(c) James Chipman Griffin b. 28 Oct. 1760
(d) Deborah Griffin 6 Oct. 1763
(e) Thomas Griffin, Jr. b. 12 Oct. 1766
