Hello, Louise,
I have a Jacob Chester in my ancestry, but his family is from Burk Co NC. And, I think your Jacob is about 18-20 years younger than my Jacob. However, I ran across this post on another board that seems to be a match for your Jacob. Below the message is the web address of the posting.

I also have a copy of an affadavit from Sevier Co., AR dated 17 Aug 1891 regarding a widow's pension for Louisa E. Wolf Chester from Jacob R. Chester's service during the Mexican-American War. He served under Captain William Delay in the regiment commanded by Col. Jefferson Davis.
My Chesters apparently lived in both Sevier and Polk Counties.
Do any of these names or events match your Sarah Chester?

Hope you find this helpful.
