You're right most of this list is American Chapmans, and most of them
southern Chapmans (mine are northern, so mine never get discussed either).
And I apologize; I was one of the people who shifted your discussion to the
Illinois Chapmans. Occassionally our British and Irish ancestors get
discussed, but the most recent one I remember was a British Chapman coming
over during the War of 1812. Much earlier than your Chapmans.
In answer to your question - "where are the British & Irish researchers?"
I
would try at GENUKI (GENealogy UK and Ireland) - I've found quite a bit of
help with my British & Irish ancestors there. However, I've not found this
kind of discussion group. They have quite a bit of information especially
with regard to local history. Mostly the GENUKI stuff is information pages
and some of those are pages put up by local genealogical societies. You can
then contact those local societies, sometimes by email, but often offline,
and they may be able to help.

Since your story also involves some Canadian history check also on Canadian
genealogy sites, too. My cousin had some good luck contacting a Canandian
genealogical society for some of his research.
If you think official documents might help you can also try the National
Archives either of England, Ireland, or Canada. I put the addresses for the
British and Irish archives below. The British and Canadian Archives even
have some documents online, most notably British wills. Sometimes you have
to pay a fee to view or download them and then you have to transcribe the
handwriting. Ireland might have some documents online too, but none of the
ones I wanted were available that way. Even so it is amazing that we can
view all the catalogues online.
