A couple of thoughts here:
1) Seems like you ought to be able to find Joseph in the 1910 and 1920
census for CO. That would give you two more data points regarding his age.
2) A Colorado death certificate for Joseph (1922) and Ida (1910) would
likely provide invaluable information (including possibly their parents'
names). You need to acquire those.
3) Have you seen the tombstones for Joseph and Ida, or just a transcription
of the information? Do they share a tombstone? Joseph on the tombstone
would be the right age to be a son of the Joseph reportedly born in 1823. Or
maybe the inscription was read or transcribed incorrectly. There are all
kinds of possibilities for errors that lead to the confusion you sense here,
but several opportunities for you to unscramble it, with a little more
digging. Certainly seems like you're on the right track, but need to proceed
from there.
