Maybe "vict" stands for victualler? I'm sure I've heard the phrase
licensed
victualler referring to someone running a pub or beer shop. The word Crown
suggests to me she was at a pub of that name.
There's a rootsweb Cumberland list that I used to belong to which is very
helpful - if you post a request to that asking whether there was a Crown in
Stanwix in 1829 you'd probably get some pointers. It's busier than the
Carruthers list though, so be prepared for some traffic if you subscribe.
If that's what vict means, it would support your idea that Mary, William and
John are related and ran the various businesses at different times. I'd
consider the possibility that Mary is John's daughter or widow, as well as
your daughter-in-law scenario.

The Cumbria Genealogy site lists the following people.

a.. John CARRUTHERS - Horse Dealer and Inn Keeper Stanwix Carlisle
1811
There is a common thread to the CARRUTHERS connections that I am looking
for with all of them and I am wondering if anyone can fill the gaps.
I am looking for Robert CARRUTHERS and Mary CARRUTHERS (nee SALKELD), my
g.g.g.grandparent, who in 1822 lived at English Damside Carlisle. Robert
was a Horse Dealer.
The only child that I know of was Robert Salkeld CARRUTHERS b1822 and
Christened at StCuthbert Carlisle. Robert S emigrated to Australia in
1850. His first son was named Robert James and his second was named John
Salkeld.
Scenario:
John CARRUTHERS is Robert CARRUTHERS' father who trained his son as a horse
dealer. He put Mary, Robert's wife into his Inn the Crown. William is a
brother to John. and D CARRUTHERS is a sibling of Robert S who remained at
English Damside to take up as a Tailor/Draper.
It's fanciful but possible.
Can anyone throw light on any of the people in the list. Also, what doe
'vict' refer to?
I'll look forward to a flood of answers.
