AT;
Have done 'em all, my friend - including turning the lard press and eating the hot
cracklings when making lard - then grinding sausage, making souse, head cheese, and paun
hous. The next day, jar canned the tenderloin and sausage, pouring the hot grease in the
jar with the sausage for sausage gravy in the winter. WOW
AT, There is so much wonderful nostalgia in our lives that is sorely missed by later
generations. I can recall going with my Dad in the woods hunting bee trees in the fall
and him cutting down the tree to get buckets of honey!! What about when in the early
spring the entire family would cut dry land cress from the corn field. Or, pick poke
leaves from the poke growing along the fence rows. Both made excellent cooked greens
needed after a long cold winter. When the dogwoods start to bloom, hit the woods to pick
bags full of morel mushroom or dry land fish!!. Come June, stroll along the railroad
track and pick wild asparagus and strawberries; or, pick wild dewberries and blackberries
along the edges of the woods - then about the first week of Augusta, hit the mountains and
get gallons of huckleberries. Add to that a couple gallons of paw-paws down by the
river.
In the winter, our most wonderful hot cereal was the bran my mother would cook - taken
from the same bag of bran we had to fatten the hogs. Today, my family still eat bran as a
hot breakfast cereal - bought now from the cheese shop at Stuarts Draft at like $1.50 a
pound.
You talk of ham and eggs for breakfast - add a couple slices of fried paun hous as some
call scrapple and your meal is made. I still make a sour dough buckwheat batter each
September and we have sour dough buckwheat cakes, and sorghum lasses for breakfast a
couple days a week. The starter is still active today. Hongry now - BH
