Even an estimated birth year helps. If they were 52 when they married in 1928, they were
born about 1875 - 1877. That is a much narrower estimate than 1800 - 1956. It is
physically possible (VERY improbable, but possible) that your grandfather was born in
1800, or in 1956.)
I found this Sophia on the LDS 1880:

She might be yours. Arguments for, she is the only Sophia born 1874 - 1878 in NY. She is
in the right county. Judging from her father's occupation, she comes from humble
circumstances. People tended to marry within their econimic class and the Sophia I found
on the 1930 census was married to a laborer. Her parents' birth states match the
1930.
Arguments against, this isn't proof, just a clue. She might be hiding in the LDS 1880
under "S. Cady". If your Sophia's middle name is Amelia and her mom is
another Sophia, they might call her "Amelia" in 1880.
Many of the people in NY in 1880 were born there; it is a populous state.
If this was a second marriage for Frank, it might have been a second marriage for Sophia,
which means Cady might be her married name, not her maiden name. If so, this isn't her
in 1880.
